Bhatura (bhatoora,bhature) are fermented fried puris which are generally served with choley or channa masala , I have used only whole wheat flour and no maida  to make bhatura. Bhatura is a fried dish and to use maida will decrease its fiber content, don’t add oil in bhatura dough , in place of that add boiled smashed potatoes (aloo) it will make your bhature very soft and will cut some fat calories  ..

We can make bhaturas in two ways at home

This is a quick bhatura recipe by which u can make bhatura at any time .To make instant bhatura we r not fermenting the bhatura dough as it takes lot of time, in place of that I have used club soda to make bhatura dough instantly.you can immediately use this dough to make instant bhaturas with chole or chana  masala. I have explain step by step instant bhatura recipe and use some healthy option like whole wheat flour (gheu ka atta) and no maida to make this fast food .

Bhatura comes out really well from this recipe and it will not become chewy even when its cold. Potatoes ,sooji (semolina/rava) and curd makes this bhatura crispy as well as spongy .Share your queries or suggestions for this recipe.

  • 4 cups of whole wheat flour (gheu ka atta)
  • 1/2 cup semolina (sooji/rava)
  • 1 cup smashed boiled potatoe (aloo)
  • 2 tablespoon sour curd
  • Plain soda water ( Club soda, Carbonated water)
  • 1-2  teaspoon salt
  • Oil or ghee (clarified butter) for frying bhature

  1. Mix flour ,semolina ,sour curd and smashed potatoes nicely.Now add little Plain soda water (Club soda, Carbonated water) at a time and knead into a soft smooth dough for bhatura .Don’t add plain water for making the bhatura dough
  2. Divide the dough equally and make small balls of it.
  3. Keep  oil /ghee to heat and prepare one plate by lining it with tissue papers so that we can keep the fried bhaturas in it and the extra oil will be soaked by tissue papers.
  4. Lightly flour a clean dry surface where you’re going to roll the bhatura and place one ball of dough on it.Roll it into oval shape bhatura
  5. Heat oil in a frying pan on high heat …to check if oil is hot enough drop a small piece of dough in oil it should float immediately to top.
  6. Then drop the rolled out bhatura gently in hot oil ,to avoid splashing of hot oil .After  5 -7 second with the slotted spoon press it gently in the centre this will make bhatura puff like a ball ,turn the bhatura and fry it on both side to make it little brown.take the bhatura out in a plate we have already prepared with tissue paper lining to absorb extra oil .

Tips for making Instant whole wheat flour Bhature

  1. Don’t add plain water to make a dough use plain soda (carbonated water, club soda)
  2. For frying bhatura oil should be hot and bhatura should be fried on high flame otherwise it will soak to much of oil.

Healthy options for making bhatura / bhature recipe

  • Make bhatura dough in whole wheat flour rather using maida in it …
  • Don’t add oil for making bhatura dough, instead of that use boiled smashed potato to make bhatura dough to make soft bhaturas
  • If you want to cut more calories from bhatura roll bhatura dough into small chapattis and roast it on pan or skillet/ tava for this u can check healthy bhatura recipe 
  • We can also bake bhaturas but I haven’t tried it yet if you have any recipe for whole wheat baked bhatura do share it with me

Muthiya is a Gujarati tea time snacks recipe …it is generally made up of any vegetables which has more water content in it .You can make  pumpkin( kodu/ bhopla / gangaphal) muthia  , bottle gourd ( doodhi / lauki ) muthiya, cucumber ( kakdi/kheera)muthiya , beetroot muthiya, Cabbage muthiya ,corriander muthiya etc….Muthia dough is made from the water released from the vegetable added in it …. I have used many flours to make this  recipe a healthy snacks … [ingredients title=”Ingredients”]

For making muthiya

  • 2 ½  cup freshly grated pumpkin / bottle gourd (lauki/doodhi)
  • 1/2 cup wheat flour
  • 1 cup besan (chickpea flour)
  • 1 cup semolina sooji
  • ½ cup barley (joi) powder (optional)
  • ½ cup maize flour (optional)
  • 2 teaspoon sesame (til) seeds
  • 1 teaspoon carom (ajwain) seeds
  • 2 teaspoon red chilly powder
  • 1 teaspoon turmeric powder
  • 2 teaspoon coriander powder
  • 1 teaspoon dry mango powder (amchur) / 1 -2 teaspoon lemon juice (optional)
  • 2 tablespoon finely chopped coriander leaves
  • 2 teaspoon salt
  • 1 tablespoon oil

For tampering muthia 

  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seed
  • 10-15 curry leaves
  • 2 teaspoon sugar (optional)
  • ½ teaspoon  asafoetida

For garnishing muthiya

  • Coriander leaves
  • Dry or fresh grated coconut

  2. Mix the ingredient to form soft dough. There is no need to add water in the dough, water diffused by pumpkin is enough to form dough.IMG_6521

  6. Now heat 1 – 2 tablespoon of oil for tempering. Add mustard seeds in it. When it crackles, add cumin seed, sesame seed, fennel seeds,  asafoetida and curry leaves to it. Sabudana is also called as sago or tapioca pearl. Sabudana kheer is a sweet pudding. This yummy eggless tapioca pudding is prepared on navratri fast or any fast/vrath  as a sweet dish. This soft sweetened sabudana(sago / tapioca) is very easy to make and takes very little time  to cook. If you’re on diet or diabetic you can make this dessert by adding skimmed milk and sugar free natura. Sabudana kheer is also called as sago payasam in southern parts of India.

  • ¼ cup sago /tapioca pearl /sabudana
  • 1 ½ cup whole milk
  • ½ cup coconut milk / ½ cup whole milk
  • 2 tablespoon sugar /sugarfree natura

  • 4-5 strands of saffron
  • ¼ teaspoon freshly ground cardamom powder

  1. Wash and soak sabhudana (tapioca /sago pearls)in ½ cup of water for 3-4 hours (if you’re using small sabudana pearls (instant sabudana)it will take 15-20 minutes to get soaked.

  3. Boil it stirring it continuously until it becomes translucent and soft . add saffron in it … now add ½ cup coconut milk or whole milk in it keep it boiling stirring it continuously …saffron is added for flavour in sago dessert IMG_5769

Tips for making sago pudding/sabudana kheer/payasam

You can add saffron , cardamom or nutmeg powder to give nice flavor to this tapioca pudding .

Stir this kheer/pudding continuously while cooking.

Don’t add sugar before the sago particle is cooked it will make your sago particles little hard to chew.

I generally make chocolate pudding from my whole wheat flour cakes. I just sandwich it nicely with vanilla butter icing and pine apple slices but this time my kid said that he wants to eat chocolate pudding  in evening , it was difficult for me to make cake and wait till it bakes as I have to go out for some function .my kid loves homemade chocolate pudding and wants to involve in each and every preparation of this recipe ,so I have made  this  quick & simple chocolate pudding  . It’s an easy egg free pudding which you can make from Marie biscuit, condensed milk, coco powder and some creative ideas from your kid for decoration.
