Bhatura are fermented puris which are served with choley or chana masala…Every time i make Whole wheat flour bhatura with curd and Whole wheat flour instant bhatua with soda water but this time I tried Cheese Bhatoora for my kids and they liked it..I have made mini cheese bhatura as a Finger Food with little chat masala sprinkled on it …its an easy  party food for kids …I have made it with whole wheat flour, potatoes and lots of curd in it

  • 3 cups whole wheat flour
  • ½ cup semolina/sooji/rava
  • 1cup curd
  • 1 cup curd
  • ½ cup grated cheese
  • 1 cup grated boiled potato
  • 1 teaspoon salt
  • Chat masala for taste (optional)
  • Oil / ghee  for deep frying

  1. Mix all the ingredients except oil and make smooth dough of it by adding little water ..

  2. Keep it covered for 1-2 hours
  3. Divide 5-6 equal parts . Lightly flour a clean dry surface where you’re going to roll the bhatura and place one ball of dough on it…roll it into 6-7 inch diameter disc, now take a small measuring cylinder which usually comes with syrup bottle  with nice edges and cut small oval disc form this big discIMG_5428IMG_5429
  4. Keep the oil /ghee to heat and prepare one plate by lining it with tissue papers so that we can keep the fried mini cheese bhaturas in it and the extra oil will be soaked by tissue papers..
  5. To check if oil is hot enough drop a small piece of dough in oil it should float immediately to top
  6. Then Add the small oval disc of bhaturas gently in hot oil ,to avoid splashing of hot oil ..Turn the bhaturas with the help of slotted spoon and fry it on both side to make it little brown…take the bhatura out in a plate we have already prepared with tissue paper lining to absorb extra oil ….
  7. Sprinkle some chat masala on mini cheese bhature and serve it with choley or chana masala or as it is  .

Shakarkandi ki chat recipe – Baked sweet potatoes in Indian style

shakarkandi / ratale / ratalu chat This Tangy Baked Sweet potatoes ( shakarkandi /ratale / ratalu chaat ) recipe is a healthy option of sweet potato fries. In winters when I come to Delhi the first thing I tasted on road side eatery was tangy sweet potatoes (shakarkandi ki chat). They made it in two ways –

Roasted sweet potatoes on charcoal or husk

or

Deep fried sweet potatoes

 

Then they season it nicely with lots of spices, lemon juice and add little mustard oil to give that pungent, prickly aroma, with the irresistible aftertaste. I really loved this sweet potato recipe and thought of making it little healthy. The roasted option was really good but it was very mushy and my kid said he would not eat it. The fried ones are not at all a good option.

I baked these sweet potatoes with little oil and salt and then seasoned it with some spices and it turned out very well. I hope you will enjoy this recipe

  • ½ kg sweet potatoes
  • 1 teaspoon salt
  • 1-2 teaspoon oil
  • 2 teaspoon lemon juice (you can add it according to your taste)

For seasoning 

I make seasonings of two types (you can change the quantity according to your taste)

  • ½ teaspoon red chili powder+1 teaspoon chat masala+ 1/2 teaspoon mustard oil (optional if you don’t like raw mustard oil flavour)
  •                                                                                    OR
  • ½ teaspoon cinnamon powder (dalchini powder)+1 teaspoon paprika  powder+ ½ teaspoon black pepper

  1. If you are on vrath just add black pepper for seasoning and add saindhanamak in place of normal salt
  2. I had prepared this recipe at the time of vrath so the picture of this recipe contains black pepper seasoning

My suggestion for Navratri Vrath Festival—

  1. Drink lot of water and fluids such as coconut water sugarfree fresh juice
  2. Eat lots of fruits
  3. Try to avoid fried menus of navratri
  4. Eat healthy vrath recipe in small portion at regular interval
  5. Enjoy the festival rather than starving yourself …it’s a healthy suggestion
  6. Long time starvation and  too much of tea and coffee dose  will increase your acid refluxes (acidity)
  7. You can make god happy by helping people and children who r in need rather than starving yourself..

  • 1 cup singhara atta (water chestnut flour)
  • 2 medium size potatoes boiled
  • Saindha namak(vrath ka namak) for taste
  • 1 teaspoon coriander leaves finely chopped(optional)
  • 1 green chilly finely chopped/ ½ teaspoon red chilly powder
  • 2 tablespoon grated carrot
  • Water to make dough
  • Oil or ghee to roast parathavrath ka khana

  2. Heat 1 teaspoon oil in a pan add cumin seed let it crackle then add green chilly & curry leaves  in it …add this tempering in the mixed raita mixture and serve it with any rice recipe or as a side dish or you can simply eat it as a salad ..

Add peanut powder to absorb water released from cucumber & tomatoes  .If you are serving this koshimbir/raita /kachumber immediately no need to add peanut powder.

Sabudana wada taste really good but soaks lot of oil ,so I make Upwasach Thalipeeth (Vrath ka Multi Flour Paratha)which is  good option for sabudana wada ,its like roasted sabudana wada with little more flours…it’s a maharashtrian recipeThalipeeth is  made with roasted flour…if you don’t have vrath you can make thalipeeth with variety of flour ,it’s a multi-grain roti with any vegetables(like bottle gourd /carrot /radish/methi leaves/palak etc) grated in it … at the time of vrath you can roast the flour of vrath and add potato for binding in it …you can also add an vrath wala grated vegetable in it …[ingredients title=”Ingredients”]

  • 1 cup Sabudana 
  • 1 tablespoon rajgira flour /kuttu ka atta(buckwheat flour)
  • 1 tablespoon singhara atta (water chestnut flour)
  • 1 ½  tablespoon roasted peanut powder
  • 1 cup grated boiled potato
  • 1 finely chopped green chilly (add it according to your taste)
  • 1 tablespoon finely chopped green coriander leasves (optional)
  • 1 teaspoon cumin seed powder(optional)
  • Saindha namak (rock salt)/common salt for taste

  1. Wash sabudana with drinking water (don’t use tap water for washing sabudana as it starts soaking water when you wash it)…Wash it until water runs clear
  2. Add¾ cup of drinking water in washed sabudana …it should be covered in water  …Soak it overnight or atleast  6 -7 hours
  3. Mix overnight water soaked sabudana ,boiled potatoes , roasted peanut powder, finely chopped green chilly, cumin seed powder, Saindha namak (rock salt)/common salt &  rajgira flour /kuttu ka atta(buckwheat flour)  & singhara atta …and make a soft dough using very less or no water…IMG_5173IMG_5177IMG_5180
  4. Divide the above mixture in 5 equal partsIMG_5182
  5. With the help of rajgira flour /kuttu ka atta(buckwheat flour)  /singhara atta (water chestnut flour) roll each portion into 4-5 inch disc …IMG_5186

Heat frying pan or griddle (preferably non stick one or you have to add 1teaspoon extra oil) add little oil or ghee on it ..place the rolled disc of thalipeeth on it ..cook it on low flame for 2-3 minutes …brush little oil on the upper side and turn the thalipeeth disc and roast it on other side for 2 minutes…roast both the side until it becomes golden brown…serve it with vrath wali coconut chutney or curd or vrath wala rayta

I love kababs , and at the time of vrath (fast) we want something interesting…kababs are generally fried one  but I had roasted it on non stick pan and it turned out well, but kids like the fried ones so I have made both fried and roasted vrath wale kabab..if you want you can grill this kabab …

  • 3 raw bananas
  • 2 medium size potatoes
  • 1 finely chopped green chilly (according to your taste)
  • ½ cup kuttu ka atta(buckwheat flour)/sabudana atta(tapioca flour)/rajgira atta(Amaranth seed flour)
  • Saindha namak(rock salt)/ salt for taste
  • 1 teaspoon lemon juice or 1teaspoon amchur(raw mango powder)
  • Oil for frying or roasting

  1. In place of raw banana you can add Arbi / Arvi (Arum) …
  2. If your  not on vrath you can add besan/bread crumbs  in place of kuttu ka atta(buckwheat flour)/sabudana atta(tapioca flour)/rajgira atta(Amaranth seed flour)
  3. If you want you can grill this kabab in your microwave ovens grilling option …brush it with oil before grilling 

How to make shikran (Easy banana milk custard for vrath)

IMG_4650When we r kids we use to eat shikhran almost every alternate day in morning breakfastBanana goes very well with milk than any other fruit …Fruits should not be eaten with milk (as said in ayurveda)but banana is the exceptional case… banana milk custard is very healthy and nutritious for kids as well as adult who needs something which is quick energy giving as well as healthy…it gives instant energy during vrath (fast ) time..my mom’s recipe was very simple to make shikran with three ingredients..bananna ,milk and jaggery(gul/gud shakkar) …I give little more flavor to this recipe by adding cardamom in summers and kesar (saffron) in winters …banana is rich in carbohydrate ,vitamin a and c ,with lots of fibres ,combination of this fruit with milk gives healthy recipe… [ingredients title=”Ingredients”]

  • 2 ripened bananas
  • 1 cup cold or warm whole milk/toned milk (for kids use whole milk)—I personaly prefer the cold milk (not chilled)
  • 2 teaspoon jaggery (gul/gud shakar )powder/demerara sugar
  • ¼ teaspoon freshly grounded cardamom powder/ 1 pinch of kesar (saffron)
  • 1 tablespoon raisins / dry black currants (manuka)
  • 4 almonds

Blanch almonds  🙂 Now the question is how to blanch almonds?

But its very simple boil a cup of water add almond in it boil it for 1 minute and immediately drain it in a colander or stainer rinse them with cold water  ..u will notice that the almond skin is shrink ..Now with your fingers you can easily remove the skin of almonds..chop this blanched almonds  for Banana custard (shikran) ..IMG_4624IMG_4638IMG_4641IMG_4644IMG_4646

  1. Prepare this custard (shikran) when you want to eat it , don’t store it …
  2. Use ripened bananas for making shikran …
  3. Use cardamom for flavor in summers and kesar (saffron) in winters..Without any worries of cold you can eat shikran(banana ) custard in winters by adding 4-5 strands of saffron in it..
  4. Use Baby Bananas if you have cold problem after eating bananas  
  5. Banana custard is strictly no no for diabetic people
  6. Don’t add plain sugar in place of jaggery(gul/gud shakar) /demerara sugar
